Peanut Butter Substitute for Fresh Lumpia Sauce
Fresh lumpia is a Filipino dish, comprising of vegetables wrapped inside a soft, thin crepe, similar to a summer roll. The dish is served with a dipping sauce, usually made of soy sauce, peanut butter, brown sugar, garlic and water. If you don't have peanut butter to hand -- or are otherwise unable to use it -- you have a choice of several substitutes you could use as a replacement.
Peanuts

If you don't have peanut butter on hand, but you want your lumpia sauce to taste traditional, you can make your own out of peanuts. If you have unroasted peanuts, you'll first need to roast them in the oven for 5 to 8 minutes at 350 degrees Fahrenheit, until they look lightly browned. Put them in a food processor, adding a 1/4 teaspoon of salt and 1 tablespoon of vegetable oil for every cup of peanuts. Process them until they form a smooth paste. You should get 1 1/4 cups of peanut butter out of 2 cups of peanuts.
Almond Butter

You can use the same ratio of almond butter to replace peanut butter in your fresh lumpia sauce. Bear in mind that it is slightly sweeter than peanut butter, so you may want to compensate for this by adding a pinch of salt or a little more garlic to increase the savory flavors. It is also slightly runnier than peanut butter, so you may need less water. Add the water in your recipe gradually and stop adding more once you have reached the desired consistency, even if you have not used all of the prescribed water.
Cashew Butter

Cashew butter has a rich and creamy consistency, so it will make an indulgent lumpia sauce. The taste won't be exactly as intended, but the sauce will have a similar texture and flavor profile. If nutrition is a consideration for you, know that cashew butter is lower in fiber and protein, and higher in saturated fat, than both peanut and almond butter.

Sunflower seed butter, also known as sunbutter, is the ideal substitute for peanut butter for anyone who is allergic to tree nuts. It is a little bit blander than peanut and other nut butters, so you may want to increase the amount of garlic or soy sauce you use in your lumpia sauce recipe, to boost the flavors.
