How long can food be kept in the danger zone?
Food should not be left in the danger zone for more than 2 hours, and no more than 1 hour if the temperature is above 90 °F (32.2 °C). The danger zone is the temperature range between 40 °F (4.4 °C) and 140 °F (60 °C), in which bacteria can multiply rapidly.
