Why call it blackstrap?
The final product of the sugar refining process, Blackstrap molasses, derives its name from the dark, molasses-like substance left behind after the sugar crystals ("white sugar") have been spun out in a centrifuge. The remaining liquid is called "blackstrap" due to its dark, viscous consistency, which resembles molasses.
