Ingredients
* 10 pounds cracked corn
* 2 pounds malted barley
* 1 pound rye flour
* 1/2 pound wheat flour
* 5 gallons water
* 2 cups yeast
Instructions
1. In a large pot, bring 3 gallons of water to a boil.
2. Add the cracked corn and malted barley and stir until combined.
3. Reduce heat to low and simmer for 1 hour, stirring occasionally.
4. Remove from heat and let cool for 15 minutes.
5. In a separate bowl, combine the rye flour and wheat flour.
6. Add 2 gallons of cold water and whisk until smooth.
7. Add the flour mixture to the pot of corn and barley.
8. Stir until combined.
9. Cover the pot and let it sit at room temperature for 12 hours.
10. After 12 hours, add the yeast and stir until combined.
11. Cover the pot again and let it sit for another 12 hours.
12. After 12 hours, strain the corn whiskey through a cheesecloth-lined colander into a clean container.
13. Cover the container and let it sit for at least 2 weeks before drinking.
