Why does water form in a lemon meringue pie?
Water in a lemon meringue pie is caused by condensation. When the hot filling is added to the pie shell, and covered with meringue topped with sugar, it creates steam. As the steam rises, some of it cools down again and it starts forming droplets on the cool surface (in this case sugar and meringue on top).
