How do you cook apple and rhubarb crumble in a pressure cooker?
You can't really make a crumble in a pressure cooker. The whole point of a crumble is to have a crispy, caramelized topping, and the pressure cooker environment won't allow for that.
However, you can use your pressure cooker to make a delicious apple and rhubarb compote or sauce!
Here's how:
Ingredients:
* 4 cups chopped rhubarb
* 4 cups chopped apples (Granny Smith or other tart variety)
* 1/2 cup sugar (adjust to your taste)
* 1/4 cup water
* 1/4 cup lemon juice (optional)
* Pinch of cinnamon (optional)
Instructions:
1. Prepare the fruit: Wash, peel, and chop your apples and rhubarb.
2. Combine ingredients: In your pressure cooker, combine the fruit, sugar, water, lemon juice, and cinnamon (if using).
3. Cook under pressure: Close the pressure cooker and cook on high pressure for 5 minutes.
4. Release pressure naturally: Let the pressure release naturally for 10 minutes before releasing the remaining pressure manually.
5. Serve: You can enjoy the compote as is, or blend it for a smoother sauce. Serve warm or cold with yogurt, ice cream, pancakes, or oatmeal.
Tips:
* For a thicker compote, add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) at the end of cooking.
* You can also use this method to make a delicious strawberry rhubarb compote!
