How to Cook Bean Soup With Smoked Pork
Bean soup is a hearty, high fiber, high protein meal that doesn't require you spend a long time in the kitchen. Smoked pork adds a meaty, smoky flavor to this soup, which cooks in a slow cooker while you devote your time to other things. Freeze batches of this soup for a quick meal on days when you don't have time to cook. Serve the soup with cornbread or rice.
Things You'll Need
- 2 cups assorted dried beans
- Water
- Pot or large bowl
- ½ tsp. salt
- ½ tsp garlic
- ½ tsp. oregano
- ½ tsp. cumin
- Smoked pork
- Slow-cooker
Instructions

Wash dried beans and sort to remove any rocks or broken beans. Use a variety of beans for this soup, such as black-eyed peas, pinto, navy beans, kidney beans, black beans, lima beans and others.

Put the beans in a pot or large bowl and cover with cold water. Soak overnight.

Drain the soaked beans and put in the slow cooker with the seasonings and the smoked pork. You can use a pork chop, a cup or so of chopped ham or shoulder, or any smoked pork.

Cover with water. Turn the slow cooker to high and cook until mixture begins to simmer.

Lower the heat to low and cook six to eight hours.
