How do you make sugar paste sea shells without a mold?
To make seashell-shaped sugar paste decorations without using a mold, follow these steps:
Materials
- Gumpaste or white modeling chocolate
- Rolling pin
- Seashells (optional)
- Edible food glue (optional)
- Edible luster dust (optional)
- Small soft paintbrushes (optional)
Instructions:
1. Start with a base of gumpaste or white modeling chocolate. Prepare the sugar paste by kneading it until it becomes soft and pliable.
2. Roll out the sugar paste thinly. Use a rolling pin to roll out the sugar paste evenly to a thickness of about 1/16 to 1/8 of an inch (2-3mm).
3. Shape the shells. Pick up the rolled-out sugar paste sheet carefully and lay it flat on your work surface. Place a natural seashell upside down onto the sugar paste and press down gently. Or hold a seashell in one hand and the rolling pin in the other hand and roll it on the shell from one side to the other applying enough pressure. Remove the shell from the sugar paste.
4. Add texture to the shells. Use a small, soft paintbrush to add texture to the sugar paste shells. Gently brush around the edges to give them a more realistic seashell texture.
5. Attach edible luster dust. This is an optional step. Mix a small amount of edible glue (like tylose) with some water to create a liquid. Paint this liquid onto the shells and sprinkle edible luster dust of your choice to give the shells a glossy, shimmery finish.
6. Allow to dry completely. Place the sugar paste seashells on a baking rack or a sheet of parchment paper to dry completely. This may take several hours or overnight.
7. Assemble. Assemble your seashell decorations as desired. You can use these seashells as garnishes for cakes, cupcakes, or other desserts. Attach the seashells using a small amount of edible glue or royal icing.
This method enables you to create seashell-shaped sugar paste decorations without requiring a specific mold. By using seashells as guides and rolling the sugar paste over them, you can achieve a realistic seashell texture. Experiment with different-sized shells and colors to add variety to your designs.
