What is the recipe for pierogis?

Ingredients:

Dough:

* 4 cups AP flour

* 2 tsp salt

* 1 egg

* 1 cup water

Filling:

* 5 lbs potatoes, peeled and cubed

* 1 cup chopped onions

* 2 cups shredded cheddar cheese

* 1/2 cup chopped parsley

* Salt and pepper to taste

Instructions:

1. Prepare the dough by mixing the flour and salt in a large bowl. Add the egg and water and mix until the dough comes together. Knead the dough on a floured surface until smooth and elastic, about 5 minutes.

2. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

3. While the dough is resting, prepare the filling by boiling the potatoes in salted water until tender. Drain the potatoes and mash them until smooth. Add the onions, cheese, parsley, salt, and pepper to the potatoes and mix until well combined.

4. Divide the dough into 4 equal pieces. Roll out each piece of dough on a floured surface until it is about 1/8 inch thick.

5. Use a 3-inch round cutter to cut out circles of dough. Place about 1 tablespoon of filling in the center of each circle of dough. Fold the dough over the filling and pinch the edges together to seal.

6. Bring a large pot of water to a boil. Drop the pierogis into the boiling water and cook for 3-4 minutes, or until they float to the surface.

7. Drain the pierogis and serve with sour cream, bacon bits, or your favorite sauce.

Tips:

* If you don't have a round cutter, you can use a glass or jar to cut out circles of dough.

* You can also freeze the pierogis after they have been cooked. To do this, place the pierogis on a baking sheet and freeze them for 3-4 hours. Then transfer the pierogis to a freezer-safe bag and store them for up to 2 months.

* To cook frozen pierogis, simply boil them in salted water for 5-7 minutes, or until they are heated through.
