  • Kitchen scissors
  • Small shallow containers with covers

Instructions

  1. Work quickly after the lobster dinner is finished. Lobster, as well as other seafood, should be refrigerated within two hours after cooking.

  2. Remove all of the lobster meat from the shell. Use kitchen scissors to cut through claw or other uneaten shell parts to get to the meat.

  3. Divide the lobster meat into small shallow containers. The meat may not cool quickly enough in the refrigerator if placed in a single, large container.

  4. Place the cover on the container and refrigerate immediately.

  5. Reheat the lobster meat in a small amount of water in a saucepan to a temperature of 165 degrees Fahrenheit on a meat thermometer, if you plan to use it in salads or other uncooked dishes. If using in omelets and casseroles, the lobster will be reheated by the cooking process.
