What color are live lobsters?
Live lobsters are actually not the bright red color you see them as in restaurants. They are a dark greenish-brown to bluish-gray.
The red color comes from a pigment called astaxanthin, which is present in the lobster's shell. When cooked, the proteins in the shell denature and the astaxanthin is released, revealing its bright red color.
