Jill St. John's Shrimp Recipe
Ingredients:
For the shrimp:
- 1 pound shrimp, peeled and deveined
- 1/2 cup olive oil
- 1/4 cup white wine
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- Salt and pepper to taste
For the sauce:
- 1/4 cup mayonnaise
- 1/4 cup ketchup
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions:
1. In a large bowl, combine the shrimp, olive oil, white wine, parsley, basil, garlic, lemon zest, lemon juice, salt, and pepper. Toss to coat.
2. Heat a large skillet over medium heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side.
3. While the shrimp is cooking, make the sauce. In a medium bowl, whisk together the mayonnaise, ketchup, Dijon mustard, honey, smoked paprika, salt, and pepper.
4. Once the shrimp is cooked, add the sauce to the skillet and cook until heated through, about 1-2 minutes.
5. Serve immediately with your choice of sides.
