How to Cook Stuffed Peppers With a Microwave (6 Steps)
Stuffed peppers were all the rage in the 1970s, but they're ideal for today's busy cook, too. Stuffed peppers make for quick and healthful dining, especially when filled with brown rice, kale, tomatoes, smoky cheese or lean meat. Traditional methods call for blanching the peppers in water before filling and baking them. The entire process can take one hour or more. Streamline your approach by using instant rice and pre-cut vegetables, and microwaving peppers instead.

- Peppers
- Knife
- Cutting board
- Microwave-safe dish and lid
- Filling
Instructions

Wash the peppers, cut off the tops and remove the cores.

Place the peppers, tops down, in a circle in a microwave-safe baking dish. Pour 1/2 inch of water in the bottom of the dish.

Cover the peppers and microwave them on high for 3 to 6 minutes, or until they're tender, but not soggy. Drain the water.

Set the peppers upright in the baking dish in a circle.

Fill the peppers with the stuffing mix of your choice. The stuffing mix will condense slightly during cooking so fill the peppers completely to the top.

Cover the peppers again and microwave on high for 1 to 2 minutes, or until heated through.
