How to Cook Barbecue T-Bone Pork Chops in a Pot

Barbecued T-bone pork chops are a flavorful addition to any meal. Searing the chops on the stove top and then putting them in the oven to bake in a bath of smoky barbecue sauce results in a rich, juicy main course.

Things You'll Need

  • T-bone pork chops
  • Paring knife
  • Salt and pepper
  • Large, oven-proof pot with lid
  • Coconut oil
  • Sliced onion
  • Minced garlic
  • Barbecue sauce
  • Meat thermometer

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Trim any bands of fat or silver skin from the pork chops. Sprinkle each side of the pork chops with salt and pepper.

  3. Place a large oven-proof pot with a tight-fitting lid on the stove and add a little coconut oil to the pot. Turn the burner up to medium-high and heat until the oil shimmers.

  4. Add the pork chops to the hot pan, searing them for two minutes per side. If the chops stick when you try and turn them, let them cook for an additional 30 seconds, or until the meat releases itself from the pan.

  5. Remove the pork chops from the pan, reduce the heat to medium and add the onions to the pan. If the onions begin to stick, add a little more coconut oil and sauté until the onion turns translucent. Add the garlic and cook until the onion and garlic turn golden brown.

  6. Return the pork chops to the pan and cover with barbecue sauce. Spread the sauce around to even coat the meat, place the lid on the pan, and transfer it to the preheated oven.

  7. Bake the pork chops for 30 to 45 minutes, or until they reach an internal temperature of 145 degrees on a meat thermometer. If the pork is not fully cooked after 45 minutes, return to pot to the oven and check for doneness at 10-minute intervals.
