Creamy Cajun Chicken Spaghetti with Roasted Vegetables
This recipe combines the comfort of chicken spaghetti with a spicy Cajun kick and the freshness of roasted vegetables.
Ingredients:
* For the Chicken:
* 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
* 1 tbsp olive oil
* 1 tbsp Cajun seasoning
* Salt and pepper to taste
* For the Sauce:
* 1 tbsp olive oil
* 1/2 cup chopped onion
* 1/2 cup chopped bell pepper (any color)
* 2 cloves garlic, minced
* 1/4 cup flour
* 2 cups chicken broth
* 1 cup heavy cream
* 1/2 cup shredded cheddar cheese
* 1/4 cup chopped fresh parsley
* Salt and pepper to taste
* For the Vegetables:
* 1 cup broccoli florets
* 1 cup sliced carrots
* 1 cup sliced zucchini
* 2 tbsp olive oil
* Salt and pepper to taste
* Other:
* 1 lb spaghetti, cooked al dente
* 1/4 cup grated Parmesan cheese, for serving (optional)
Instructions:
1. Prepare the chicken: Heat olive oil in a large skillet over medium heat. Season chicken with Cajun seasoning, salt, and pepper. Cook chicken until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
2. Roast the vegetables: Preheat oven to 400°F (200°C). Toss broccoli, carrots, and zucchini with olive oil, salt, and pepper. Spread vegetables on a baking sheet and roast for 15-20 minutes, or until tender-crisp.
3. Make the sauce: In the same skillet, heat remaining olive oil over medium heat. Add onion and bell pepper and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
4. Thicken the sauce: Sprinkle in flour and cook for 1 minute, stirring constantly. Gradually whisk in chicken broth until smooth. Bring to a simmer and cook for 5 minutes, stirring occasionally.
5. Finish the sauce: Stir in heavy cream, cheddar cheese, and parsley. Season with salt and pepper to taste.
6. Combine: Return chicken to skillet and cook for 2 minutes, or until heated through.
7. Serve: Add cooked spaghetti to sauce and toss to combine. Divide spaghetti mixture among bowls and top with roasted vegetables. Sprinkle with Parmesan cheese, if desired.
Tips:
* You can use any type of Cajun seasoning you like.
* Feel free to add other vegetables, such as mushrooms, bell peppers, or corn.
* If you don't have heavy cream, you can use milk or half-and-half.
* For a spicier dish, add a pinch of cayenne pepper to the sauce.
