Pasta with Uncooked Tomato, Basil and Mozzarella Sauce?
Ingredients
- 1 pound dry pasta, such as penne or rigatoni
- 1 pint cherry tomatoes, halved
- 1 bunch fresh basil, chopped
- 1/2 cup extra-virgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces fresh mozzarella cheese, cut into 1/2-inch cubes
Instructions
1. Cook the pasta according to the package directions.
2. While the pasta is cooking, in a large bowl, combine the cherry tomatoes, basil, olive oil, salt, and pepper. Toss to combine.
3. When the pasta is done cooking, drain it and add it to the bowl with the tomato mixture. Toss to combine.
4. Add the mozzarella cheese and toss gently to combine.
5. Serve immediately.
