INSTRUCTIONS:
1. Make the pasta dough. In a large bowl, combine the flour and salt. Make a well in the center of the flour and add the egg and water. Use a fork to whisk together the egg and water, then gradually start to incorporate the flour. Continue to mix until the dough comes together and forms a ball.
2. Knead the dough. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until the dough is smooth and elastic.
3. Wrap the dough. Wrap the dough in plastic wrap and let it rest for at least 30 minutes, or up to overnight in the refrigerator.
4. Make the filling. In a medium bowl, combine the ricotta cheese, Parmesan cheese, herbs, salt, and pepper. Stir until combined.
5. Roll out the dough. Roll the dough out into thin sheets, about 1/16-inch thick.
6. Cut out the pasta. Cut the dough into circles or squares, about 3-4 inches in diameter.
7. Fill the pasta. Place a spoonful of the ricotta filling in the center of each pasta circle. Fold the pasta in half and pinch the edges together to seal.
8. Cook the pasta. Bring a large pot of salted water to a boil. Add the pasta and cook for 3-4 minutes, until the pasta is al dente.
9. Serve the pasta. Drain the pasta and top with marinara sauce and grated mozzarella cheese. Serve immediately.
