Ingredients:

- 1 pound of boneless, skinless chicken breasts or thighs, cut into 1-inch pieces

- 1 tablespoon of olive oil

- 1/2 cup of chopped onion

- 1/2 cup of chopped red bell pepper

- 1 (28-ounce) can of diced tomatoes, undrained

- 1 (15-ounce) can of black beans, rinsed and drained

- 1 (15-ounce) can of corn, drained

- 1/2 cup of shredded cheddar cheese

- 1/4 cup of chopped fresh cilantro

- Salt and pepper to taste

- Cooked pasta

Instructions:

1. Heat the olive oil in a large skillet over medium heat.
