## One-Pot Chicken and Noodles
Ingredients:
- 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1/2 cup frozen peas
- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 1/2 cup egg noodles
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions:
1. In a large pot or Dutch oven, heat the olive oil over medium heat.
2. Add the chicken and cook until browned on all sides.
3. Add the onion and garlic and cook until softened, about 5 minutes.
4. Add the chicken broth, peas, carrots, celery, and egg noodles.
5. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the noodles are cooked through and the vegetables are tender.
6. Season with salt and pepper to taste.
7. Garnish with fresh parsley and serve.
