What type of beef is NY steak?
NY steak, or New York Strip Steak, is typically cut from the short loin of the beef. This cut is located just behind the ribeye, and it's known for being leaner than the ribeye but still having a good amount of marbling, which contributes to its flavor and tenderness.
The strip loin is also referred to as the top loin, and it's sometimes called the Kansas City strip.
While the short loin is the most common source for NY steak, some butchers might use other cuts from the loin, like the long loin, for their NY steak. However, the short loin is the most preferred cut for its characteristic flavor and texture.
