How much flank steak for four people fajitas?
Ingredients:
- 1 pound flank steak, sliced against the grain
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 onion, thinly sliced
- 1 bell pepper (any color), thinly sliced
- 4 tortillas
- 1/2 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- Sour cream, guacamole, and salsa, for serving
Instructions:
1.) In a large skillet or wok, heat the olive oil over medium-high heat.
2.) Add the steak and cook for 3-4 minutes per side, or until cooked to your desired doneness.
3.) Transfer the steak to a plate and let it rest for 5 minutes.
4.) Add the onion and bell pepper to the skillet and cook for 5-7 minutes, or until softened.
5.) Add the chili powder, cumin, salt, and pepper to the skillet and stir to combine.
6.) Add the steak back to the skillet and stir to combine.
7.) Warm the tortillas in a microwave or on a hot skillet.
8.) To assemble the fajitas, place a tortilla on a plate and add some of the steak, onion, and bell pepper.
9.) Top with shredded cheese, sour cream, guacamole, and salsa.
10.) Fold the tortilla in half or roll it up and enjoy!
