Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes

- 1 pound veal stew meat, cut into 1-inch cubes

- 1 pound pork shoulder, cut into 1-inch cubes

- 2 tablespoons all-purpose flour

- 1 teaspoon salt

- 1/2 teaspoon black pepper

- 3 tablespoons olive oil

- 1 large onion, chopped

- 2 stalks celery, chopped

- 2 carrots, chopped

- 2 cloves garlic, minced

- 1 cup red wine

- 1 cup beef broth

- 1 cup chicken broth

- 1 bay leaf

- 1 teaspoon dried thyme

- 1 teaspoon dried rosemary

- 1/2 cup frozen peas and carrots

- 1/4 cup chopped fresh parsley

Instructions

1. Preheat oven to 350°F (175°C).

2. In a large bowl, combine the beef, veal, pork, flour, salt, and pepper. Toss to coat.

3. Heat the olive oil in a large Dutch oven or oven-safe pot over medium heat.

4. Add the beef, veal, and pork and brown on all sides.

5. Add the onion, celery, carrots, and garlic and cook until softened.

6. Add the red wine, beef broth, chicken broth, bay leaf, thyme, and rosemary.

7. Bring to a boil, then reduce heat and simmer for 1 hour.

8. Add the frozen peas and carrots and cook for 15 minutes more, or until the vegetables are tender.

9. Stir in the chopped fresh parsley and serve.
