What is a good pickled sausage recipe?

Ingredients:

- 2 pounds pork sausage links

- 1/2 cup pickling salt

- 3 cups white vinegar

- 1 cup water

- 3 garlic cloves, minced

- 1 teaspoon mustard seeds

- 1 teaspoon celery seeds

- 1 teaspoon coriander seeds

- 1 teaspoon red pepper flakes

- 1/2 cup sugar

Instructions:

1. In a large pot, combine the pickling salt, vinegar, water, garlic, mustard seeds, celery seeds, coriander seeds, and red pepper flakes and bring to a boil over medium heat.

2. Reduce the heat to low and simmer for 5 minutes, or until the sugar has completely dissolved.

3. Add the sausage links to the pot and bring back to a simmer over medium heat.

4. Cook the sausages for 15 minutes or until they are heated through.

5. Remove the pot from the heat and allow the sausages to cool completely in the liquid.

6. Transfer the sausages and pickling liquid to a clean glass jar and seal tightly.

7. Refrigerate the sausages for at least 24 hours before eating.

Tips:

- To make spicy pickled sausages, increase the amount of red pepper flakes to 1 1/2 teaspoons.

- You can also add other vegetables to the pickling liquid, such as onions, carrots, or bell peppers.

- If you don't have a glass jar, you can also store the sausages in a plastic food storage container. Just be sure to seal the container tightly to keep the sausages from drying out.

- Pickled sausages will keep for up to 2 months in the refrigerator.
