When deveining shrimp what is the white stuff that can be found in or around vein?

The white stuff around and in the shrimp vein is the shrimp’s digestive tract and waste such as undigested food or feces. It contains fecal bacteria and should therefore not be consumed. When deveining shrimp, it’s important to clean the shells where the vein lies to completely remove any remains.
