Can You Freeze Lasagna Before Baking if You are Using Eggs?

A classic comfort food, lasagna freezes best when uncooked. When baked, the flavors meld together so wonderfully you would never know this winning meal was pulled straight from the freezer. Safely freeze lasagna with raw eggs but make sure the lasagna is thoroughly cooked before serving by using a food thermometer.

Lasagna Freezing Basics

  • Freeze a prepared lasagna unbaked by wrapping the pan with a double layer of aluminum foil and placing it in the freezer. When you're ready to eat it, either thaw it overnight in your refrigerator and bake as directed in your original recipe, or double the cooking time and bake the lasagna from frozen. You can store frozen lasagna at zero degrees Fahrenheit for six to eight months in your freezer with no loss of quality.

Freezing Raw Eggs

  • There is no safety concern regarding freezing raw eggs when they are included in a dish. The only time raw eggs should not be frozen is when they are in their shells, as this can cause cracking and the introduction of harmful bacteria. When removed from their shells, eggs can be frozen either alone or as part of a dish with no problems. Make sure your lasagna is thoroughly cooked before serving to prevent any possible foodborne illness. The internal temperature of lasagna should register at 165 F using an instant-read kitchen thermometer.

Making Lasagna

  • Use no-boil lasagna sheets to make putting a lasagna together a breeze. These pasta sheets are thinner and require no preparation like the traditional noodles that require boiling. Use plenty of sauce on your lasagna to ensure the noodles are tender once cooked. Layer the lasagna with meat or other vegetables and a ricotta-egg mixture to create firm layers throughout. Line your baking pan with aluminum foil when planning to freeze the lasagna to remove it and freeze individually without the pan, if you wish. That way, you can freeze it initially in the pan and then once frozen, remove and wrap the lasagna tightly before storing.

Lasagna Tips

  • Always bake the lasagna covered until the fillings are bubbling in the pan, at which time you should uncover the pan and allow it to finish cooking. By uncovering the pan, you allow some extra moisture to escape so you don't end up with a runny lasagna. Let your lasagna rest at least 20 minutes before serving for the best texture and taste. Once cooked, you can also cut off pieces of your lasagna and freeze them for later, again wrapping the pieces well in aluminum foil before storing in the freezer.
