How to Cook Duck on Rotisserie on a Gas Grill
If grilling a duck sounds like an adventure more suited to a gourmet chef than a backyard warrior, think again. Although cooking a duck can be intimidating due to its reputation for being tough and dry, using the rotisserie attachment on your gas grill is an easy way to produce a duck dinner that will win rave reviews, according to the Food Network.
Things You'll Need
- 1 Long Island duck, about 5 to 6 lbs
- Baking rack
- Baking sheet
- Salt and pepper
- Basting sauce of your choice
- Gas grill with rotisserie attachment
- Drip pan
- Basting brush
Instructions

Place the duck on a baking rack on top of a baking sheet one day before you plan to prepare the duck. Store the duck uncovered in the refrigerator. According to the Food Network, this will help the duck dry before you grill it.

Position the rotisserie attachment on the grill and set grill to medium heat.

Sprinkle duck with salt and pepper and poke rotisserie rod through it. Position a drip pan underneath to catch the melted or rendered fat.

Brush with your favorite basting sauce after the fat begins to melt. Continue basting every 10 minutes.

Cook the duck for 1 to 1 1/2 hours for medium rare. You may want to continue cooking, depending on your preferences for meat doneness. The Food Safety and Inspection Service of the United States Department of Agriculture recommends cooking a whole duck to an internal temperature of 165 degrees F.

Remove the duck from the grill and slather on more of the sauce. Let the duck sit on the counter for 10 minutes before cutting into thin slices.
