Can I make Italian Stuffed Peppers in a crockpot?
Ingredients
* 1 head of cauliflower, cut into florets
* 1 small onion, diced
* 1 garlic clove, minced
* 1 (28 ounce) can crushed tomatoes
* 1 (6 ounce) can tomato paste
* 1/4 cup water
* 1/2 teaspoon dried basil
* 1/2 teaspoon dried oregano
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 1 cup cooked rice
* 1/2 cup shredded mozzarella cheese
* 1/4 cup grated Parmesan cheese
Instructions
1. Grease the crock pot and add cauliflower, onion and garlic.
2. Combine the crushed tomatoes, tomato paste, water, dried basil, oregano, salt, and pepper in a mixing bowl.
3. Pour the tomato sauce over the cauliflower mixture.
4. Cover and cook on low for 8-10 hours.
5. Add rice, mozzarella cheese, and Parmesan cheese to the mixture in the final hour of cooking.
Serve the Italian stuffed peppers with grated Parmesan cheese on top.
