What if cooked chicken is left out overnight in 62 degree oven?
Leaving cooked chicken out overnight in a 62 degree oven is not safe. The USDA recommends discarding any cooked food left out at room temperature for more than two hours. This is because bacteria can grow rapidly at temperatures between 40 and 140 degrees Fahrenheit, which includes room temperature and a 62 degree oven. Even if the oven is slightly warm, it is still too warm to prevent the growth of bacteria.
To ensure the safety of cooked chicken, it should be refrigerated or frozen within two hours of cooking. When reheating cooked chicken, it should be heated to an internal temperature of 165 degrees Fahrenheit.
