How do you use chicken broth to make a sauce?
Ingredients
1 tablespoon (14 grams) unsalted butter
1 tablespoon (6 grams) all-purpose flour
1 cup (237 mL) chicken broth
½ cup (118 mL) heavy cream
1 teaspoon salt
¼ teaspoon black pepper
Instructions
Step 1: Melt the butter
In a medium saucepan over medium heat, melt the butter until it is foaming and starts to turn amber in color.
Step 2: Add the flour
Add the flour to the melted butter and whisk to combine. Cook the roux, stirring constantly, until it is golden brown and has a nutty aroma. This should take about 2 minutes.
Step 3: Add the chicken broth
Gradually add the chicken broth to the roux, whisking constantly to avoid lumps. Bring the sauce to a simmer and cook, stirring occasionally, for 10 minutes until it has reduced by about half.
Step 4: Add the cream, salt, and pepper
Add the heavy cream, salt, and pepper to the sauce and stir to combine. Bring the sauce back to a simmer and cook for 5 minutes, or until it has thickened.
Step 5: Serve
Use the chicken sauce to top your favorite dishes, such as chicken, fish, pasta, or vegetables. Enjoy!
