Christmas Morning Breakfast Ideas
Christmas morning is often a busy time with all of the gift exchanging and unwrapping of presents. Instead of fussing over a hot stove and missing all of the fun, prepare breakfast the night before so that everyone can enjoy the holiday and a hot breakfast.
Baked French Toast

Slice a loaf of french bread into approximately 20 1-inch thick slices. Arrange the bread in a greased 9-by-13-inch pan, overlapping the slices slightly to make them fit. Mix together eight eggs, 2 cups of half-and-half, 1 cup milk, 2 tablespoons of sugar, on1 teaspoon vanilla extract, 1/4 teaspoon cinnamon and 1/4 teaspoon. nutmeg in a large bowl. Beat the mixture with a whisk until it the yolks are broken and the mixture has a uniform color. Pour the egg mixture evenly over the french bread. Cover the pan with cling wrap and refrigerate it overnight. The next morning, bake the french toast in a 350 degree Fahrenheit oven for approximately 45 minutes. For additional flavor, combine two sticks of butter with one cup brown sugar, one cup chopped pecans, 2 tablespoons of corn syrup, and a dash of cinnamon and nutmeg. Sprinkle this mixture over the french toast before baking and serve the baked french toast with maple syrup.
Pancakes

Nearly any pancake recipe can be prepared ahead of time and then frozen for later use. Place the cooked pancakes in a single layer on a cookie sheet and freeze them for approximately 30 minutes. This will prevent the pancakes from sticking together in the freezer. Once the pancakes are frozen, you can place them in a freezer bag. On Christmas morning, remove the pancakes from the freezer and place them on a cookie sheet. Cover the pancakes with foil and heat them in a 350 degree oven for approximately 10 minutes or until hot. Top the pancakes with canned pie filling and whipped cream for a special presentation.
Baked Omelet

A baked omelet can be prepared the night before it is baked in a casserole dish. Combine eight eggs and one cup of milk with three ounces of cooked ham, sausage or bacon. Add 1 cup of cheese such as cheddar, Colby, Monterrey jack, pepper jack or a combination of cheeses to the mixture and pour it into an 8-inch square casserole dish. Cover the dish with aluminum foil or cling wrap and refrigerate it overnight. Bake the omelet at 350 degrees for approximately 45 minutes or until the eggs have set.
