You're in luck! Moi-moi is a delicious and versatile dish. Here's a classic recipe to get you started:
Classic Moi-Moi Recipe
Ingredients:
* 1 cup (150g) black-eyed peas, soaked overnight and drained
* 1 cup (240ml) water
* 1 small onion, chopped
* 2 cloves garlic, minced
* 1 Scotch bonnet pepper (or to taste), finely chopped
* 1/2 teaspoon ground ginger
* 1/4 teaspoon ground nutmeg
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 1/4 cup (60ml) vegetable oil
* 1/2 cup (120ml) chopped fresh parsley (or coriander)
Instructions:
1. Blend the beans: In a blender, combine the soaked black-eyed peas with 1/2 cup of the water. Blend until smooth, adding more water if needed to achieve a smooth paste.
2. Sauté the aromatics: Heat the oil in a saucepan over medium heat. Add the onion, garlic, and scotch bonnet pepper. Sauté until fragrant, about 5 minutes.
3. Combine ingredients: Transfer the blended bean paste to the saucepan. Add the remaining water, ginger, nutmeg, salt, and pepper. Stir well to combine.
4. Cook the mixture: Simmer the mixture over low heat for 10-15 minutes, stirring occasionally, until thickened and slightly reduced.
5. Add the herbs: Stir in the parsley or coriander. Remove from heat.
6. Shape the moi-moi: Pour the mixture into a greased mold or individual ramekins. You can also use banana leaves or aluminum foil to wrap and steam the moi-moi.
7. Steam or bake: Steam the moi-moi over a pot of boiling water for 30-45 minutes or until cooked through. Alternatively, you can bake it in a preheated oven at 350°F (175°C) for 30 minutes.
Tips:
* For a smoother texture, you can strain the blended bean mixture through a fine-mesh sieve.
* Feel free to adjust the spice level by adding more or less scotch bonnet pepper.
* Experiment with different flavors! You can add other spices like paprika, curry powder, or thyme.
* Serve the moi-moi hot, warm, or cold. It's great as a side dish, appetizer, or even as a filling for sandwiches.
Enjoy your delicious homemade moi-moi!
