Sabudana is a type of starch that is extracted from the roots of the tapioca plant. It is a popular ingredient in many Indian dishes, such as sabudana khichdi and sabudana vada. Sabudana is also used in some Asian cuisines, such as in the Malaysian dish laksa.

Since sabudana is a plant-based food, it is considered to be vegetarian.
