What temperature does protease works best at?
Proteases are enzymes that catalyze the hydrolysis of peptide bonds. The optimal temperature for protease activity varies depending on the specific protease, but most proteases work best at temperatures between 37°C and 40°C. This temperature range is close to the body temperature of mammals, which is why many proteases are produced by bacteria and other organisms that live in or on mammals. Some proteases, however, work best at higher or lower temperatures. For example, some proteases that are produced by thermophilic bacteria work best at temperatures above 100°C.
