How to Cook Snow Peas by Boiling Them

Unlike regular field peas or common garden peas that are removed from the pod, snow peas, often known as Chinese pea pods, are eaten pod and all. Boiling sweet, tender snow peas is a snap, and a quick plunge in boiling water preserves the flavor and accentuates the vivid color. Look for crisp, bright green snow peas with just a hint of small, round peas forming in the pod. Don't overcook snow peas; overcooked, they quickly become tough and rubbery and lose color, nutrition and sweetness.

  • Large saucepan
  • Salt (optional)
  • Butter or olive oil (optional)

Instructions

  1. Wash the snow peas thoroughly, then pinch both ends with your fingernails and pull the string from the thicker seam running down one side of the pod. If the peas are young and tender, pinch the ends but leave the strings intact.

  2. Fill a large saucepan with water, then add up to a teaspoon of salt, if desired. Bring the water to a full boil over high heat.

  3. Place the snow peas in the boiling water. Cook the peas for 30 seconds to 1 minute, or until the pods are crisp and tender.

  4. Remove the saucepan from the heat and drain the peas. Toss the peas with a small amount of butter or olive oil, if desired.

  5. Serve snow peas hot. If you want to chill the peas in the refrigerator for later use, dunk the hot pods into ice water quickly to stop cooking and preserve the crispness.
