How to Make Low Carb Chocolate Frosting

  1. Set the stove burner to high, and place a medium pot on it. Heat the chocolate in the pot. Stir constantly to avoid scorching the chocolate on the bottom of the pan.

  2. Cool the chocolate on the counter. Let it sit just until the liquid is no longer bubbling or particularly hot to the touch. Don't let it sit until it hardens, however.

  3. Whisk together the chocolate and the cream. They should make a smooth, light brown mixture.

  4. Adjust the stove setting to medium.

  5. Beat in the butter, sugar substitute and cocoa powder. Stir in both the chocolate and vanilla extracts. The icing will become smooth and fluffy.

  6. Eat a spoonful as a delicious treat, or use it to garnish cakes and cookies. This icing has 3.5 grams of carbohydrates per serving.
