How to Make a Rich, Low-Carb Waffle With Coconut Flour

If you think you can't enjoy waffles as part of a low-carb diet, think again! Things You'll Need

  • Waffle iron
  • 4 eggs
  • 1 tsp. olive oil
  • 1 tsp. vanilla
  • 1/4 tsp. baking soda
  • 1/4 tsp. cinnamon
  • 1 tsp. honey or other sweetener
  • 2 tbsp. coconut flour

Instructions

  1. Preheat the waffle iron. Many waffle irons have adjustable temperature settings, allowing you to choose the color and texture of your waffle.

  2. Blend all the ingredients. You can use a mixer, blender, food processor or add the ingredients to a bowl and use a whisk.

  3. Pour the recommended amount of batter into your waffle iron. Consult your waffle iron's instruction manual to determine the recommended amount of batter. This recipe usually makes four to six waffles, depending on your waffle iron.

  4. Close the waffle iron and cook for 3 to 5 minutes, or until the waffles easily separate from the waffle iron. Cooking time will depend on your waffle iron's recommended cooking times and the desired waffle texture and color.

  5. Repeat with the remaining batter.
