How to Make Diabetic Banana Nut Bread

Things You'll Need

  • 1 1/3 cups flour
  • 1/2 cup Splenda
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 pinch salt
  • 1 1/4 cups mashed bananas
  • 1 tbsp. canola oil
  • 1/3 cup reduced-fat buttermilk
  • 2 tsp. vanilla
  • 1/4 cup chopped walnuts

  • Loaf pan

Instructions

  1. Preheat the oven to 350 degrees.

  2. Spray a 9-by-5-inch loaf pan with nonstick cooking spray.

  3. Blend dry ingredients in large mixing bowl.

  4. Combine bananas, oil, buttermilk and vanilla; mix well.

  5. Pour the wet ingredients into the dry ones and stir until mixed.

  6. Add nuts and stir.

  7. Pour batter into the greased pan and bake for 45 to 55 minutes.
