How to Make Diabetic Banana Nut Bread

- 1 1/4 cups mashed bananas
- 1 tbsp. canola oil
- 1/3 cup reduced-fat buttermilk
- 2 tsp. vanilla
- 1/4 cup chopped walnuts

Preheat the oven to 350 degrees.

Spray a 9-by-5-inch loaf pan with nonstick cooking spray.

Blend dry ingredients in large mixing bowl.

Combine bananas, oil, buttermilk and vanilla; mix well.

Pour the wet ingredients into the dry ones and stir until mixed.

Pour batter into the greased pan and bake for 45 to 55 minutes.
