How to Store Kombucha Scoby (3 Steps)

Once you purchase the scoby to make the tea, you must store it correctly in a cool, enclosed space.

Instructions

  1. Remove the scoby from any plastic packaging that it came in. Plastic can leach into the kombucha, so you should remove it before storing the scoby for any period of time.

  2. Place the scoby into a jar of kombucha if possible. If you don't have another batch of tea already made, put the scoby into a container that does not leach, such as a glass jar with a lid.

  3. Seal the jar or container and place the scoby into a refrigerator. This will help the scoby go into a dormant state. Never keep the scoby in the freezer.
