This recipe yields about 2 dozen lemon drops.
Ingredients:
* Lemon Zest: 1 tablespoon (from about 2 lemons)

* Butter: 1/2 cup, softened
* Sugar: 1 cup
* Powdered Sugar: 1 cup, for rolling

Instructions:
1. Prepare the lemons: Wash and dry the lemons thoroughly. Use a zester to finely grate the zest from the lemons. Squeeze the juice from the lemons and measure out 1 tablespoon.
2. Cream the butter and sugar: In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
3. Add lemon zest and juice: Add the lemon zest and juice to the butter and sugar mixture. Mix well until combined.
4. Add salt: Add the salt to the mixture and combine thoroughly.
5. Chill the dough: Cover the dough with plastic wrap and refrigerate for at least 30 minutes. This will make the dough easier to handle.
6. Shape the lemon drops: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
