What is lemon or orange zest?
Lemon zest and orange zest are the thin, outermost layer of the fruit's peel. It contains a high concentration of the fruit's essential oils and flavour compounds, which are responsible for the fruit's distinct aroma and taste.
Lemon and orange zest are used in cooking to add flavour to a wide variety of dishes, both sweet and savoury. They are often used in baking, but they can also be added to marinades, sauces, soups, and stews. Zest can also be used to make candied fruit and preserves.
To zest a lemon or orange, you will need a zester, a grater, or a sharp knife. If you are using a zester or grater, simply hold the fruit in one hand and run the zester or grater over the peel, being careful not to cut into the white pith beneath. If you are using a knife, hold the fruit in one hand and slice off the peel, being sure to remove only the outermost layer of peel.
Once you have removed the zest, you can use it immediately or store it for later use. To store lemon or orange zest, simply place it in an airtight container and keep it in the refrigerator for up to 2 weeks. You can also freeze lemon and orange zest for up to 6 months.
Lemon zest and orange zest are a versatile and flavorful ingredient that can be used to add a touch of citrus to any dish.
