Does liquid nitrogen remain in the ice cream?
Liquid nitrogen does not remain in the ice cream. When liquid nitrogen is added to the ice cream mixture, it rapidly boils off, creating a thick fog. This fog is actually tiny ice crystals that form as the liquid nitrogen comes into contact with the warm air. The ice crystals then trap the cold air, which helps to keep the ice cream cold. However, the liquid nitrogen itself does not remain in the ice cream.
