How do you make apple pie with everclear cider?

Ingredients

* 1/4 cup (1/2 stick) unsalted butter, cold and cut into small pieces

* 3/4 cup Everclear cider

* 1 cup packed light brown sugar

* 1/4 cup granulated sugar

* 1/4 cup cornstarch

* 1/2 teaspoon ground cinnamon

* 1/4 teaspoon ground nutmeg

* 1/8 teaspoon ground cloves

* 1/8 teaspoon salt

* 6 cups peeled, cored, and sliced apples (about 3 pounds)

* 2 tablespoons fresh lemon juice

* 1/2 teaspoon vanilla extract

* 1 egg, beaten

Instructions

1. Preheat the oven to 425 degrees Fahrenheit.

2. In a large bowl, combine the flour, salt, baking powder, and spices.

3. Add the butter and use your fingers to work it into the flour mixture until it resembles coarse crumbs.

4. Add the Everclear cider and mix until the dough comes together.

5. Turn the dough out onto a floured surface and knead it briefly until it is smooth.

6. Roll the dough out into a 12-inch circle.

7. Transfer the dough to a 9-inch pie plate and trim the edges.

8. In a medium bowl, combine the brown sugar, granulated sugar, cornstarch, cinnamon, nutmeg, cloves, and salt.

9. Add the apples, lemon juice, and vanilla extract to the sugar mixture and toss to coat.

10. Pour the apple mixture into the pie crust.

11. Brush the edges of the pie crust with the beaten egg.
