To make the pie crust:

1. whisk together the flour, sugar, and salt in a large bowl.

2. Use your fingers or a pastry cutter to work the butter into the flour mixture until it resembles coarse crumbs.

3. Gradually add the ice water, 1 tablespoon at a time, until the dough just comes together and forms a ball. Be careful not to overmix.

4. Wrap the dough in plastic wrap and flatten it into a disk. Refrigerate for at least 30 minutes, or up to overnight.

To make the apple filling:

1. In a large bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and salt. Stir until the apples are evenly coated.
