For the crust:

- 1 1/2 cups all-purpose flour

- 1/2 teaspoon salt

- 2/3 cup (1 1/2 sticks) unsalted butter, cold and cut into small pieces

- 1/4 cup ice water, plus more as needed

For the filling:

- 6 cups fresh mixed berries (such as blueberries, strawberries, raspberries, blackberries, and/or cherries), hulled and sliced if needed

- 1/2 cup granulated sugar

- 1/4 cup cornstarch

- 1/4 teaspoon salt

- 1 tablespoon lemon juice

- 1 tablespoon unsalted butter, cut into small pieces

Instructions:

To make the crust:

1. In a large bowl, whisk together the flour and salt.

2. Add the butter and use your fingers to work it into the flour mixture until it resembles coarse crumbs.

3. Add the ice water, one tablespoon at a time, until the dough just comes together. Be careful not to overmix.

4. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

To make the filling:

1. In a large bowl, combine the berries, sugar, cornstarch, salt, and lemon juice.

2. Stir until the berries are evenly coated.

To assemble the pie:

1. Preheat oven to 375 degrees F (190 degrees C).

2. Roll out the dough on a lightly floured surface to a 12-inch circle.

3. Transfer the dough to a 9-inch pie plate and trim the edges.

4. Pour the filling into the pie crust.

5. Dot the top of the filling with the butter pieces.

6. Bake the pie for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.

7. Let the pie cool for at least 30 minutes before serving.

Enjoy!
