Ingredients
* 1 cup matza meal
* 1/2 cup water
* 2 eggs
* 1/4 cup vegetable oil
* 1 teaspoon salt
* 1/4 teaspoon black pepper
Instructions
1. In a large bowl, combine the matza meal, water, eggs, oil, salt, and pepper.
2. Mix well until all of the ingredients are combined and a dough forms.
3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
4. Bring a large pot of water to a boil.
5. While the water is coming to a boil, form the matza meal mixture into balls about 1 inch in diameter.
6. Drop the matza balls into the boiling water.
7. Reduce heat to low and simmer for 15 minutes, or until the matza balls are cooked through.
8. Drain the matza balls from the water and serve hot with soup.
Tips
* To make sure that the matza balls are cooked through, insert a toothpick into the center of one. If the toothpick comes out clean, the matza ball is done.
* You can also bake matza balls instead of boiling them. To do this, preheat your oven to 350 degrees Fahrenheit. Grease a baking sheet and place the matza balls on the sheet. Bake for 15-20 minutes, or until the matza balls are golden brown.
* Matza balls can be made ahead of time and frozen. To freeze matza balls, place them on a baking sheet and freeze for 1 hour. Then transfer the frozen matza balls to a freezer-safe storage bag. When you are ready to cook the matza balls, thaw them overnight in the refrigerator or at room temperature for 1 hour.
