How to Decorate Pastry With Glazed Fruit

Glazed fruit adds a flavorful finishing touch to any type of pastry. Often used on custard tarts and puff pastries, glazed fruit has a glossy appearance and sweet taste. Decorating pastries with glazed fruit is like creating a tile mosaic -- you use raw materials in different sizes and colors to create any pattern you choose. You then brush the work with a protective glaze to help prevent it from drying out.

  • Seedless jam
  • Saucepan
  • Spoon
  • Knife
  • Colander
  • Pastry brush

Instructions

  1. Bring the jam and some water to a light simmer in a small saucepan. Stir the mixture well and remove it from heat to let cool.

  2. Wash, peel, seed and remove any stems from the fruit as needed. Slice any large fruits into bite size pieces.

  3. Arrange overlapping pieces of a single fruit, such as a strawberry, around the outer edge of the pastry. Arrange overlapping pieces of a second single fruit, such as a kiwi, inside the first ring. Cover the pastry with alternating rings of the fruit to create a stripe pattern. Alternately, cover the entire pastry with a single kind of large fruit pieces, such as peach slices. Place a small fruit piece, such as a blueberry, on the middle of each large fruit piece to create a polka dot pattern.

  4. Dip the pastry brush into the cooled glaze. Lightly brush the fruit with the glaze, making sure to cover all exposed fruit.
