Is is possible to make sugar cookies without butter or eggs?

Ingredients

* 1 1/2 cups all-purpose flour

* 1 teaspoon baking powder

* 1/4 teaspoon salt

* 1 cup granulated sugar

* 1/2 cup vegetable oil

* 1/2 cup water

* 1 teaspoon vanilla extract

* Non-Dairy Chocolate chips (optional)

* Sprinkles (optional)

Sugar-free Icing

* 1/4 cup vegan margarine

* 2 cups powdered sugar

* 1/4 cup soy or coconut milk

Instructions

1. Preheat the oven to 350°. Combine flour, baking powder and salt in a medium bowl.

2. Place sugar and oil in a large bowl and beat until light and fluffy about 2 to 3 minutes. Beat in water and extract. Slowly add dry ingredients and beat until just blended. Batter should be stiff. Fold in chocolate chips, if using.

3. Drop the dough by rounded tablespoon about two inches apart onto parchment-lined baking sheets. Flatten with a fork. Sprinkle each with colored sugar, if using.

4. Bake for 8 to 10 minutes, or until edges are golden and centers are set. Let cool on the baking sheets for 5 minutes. Remove to wire racks to cool completely. Frost with icing when cookies have cooled completely.

To Make Icing

Place the margarine in a large bowl and beat with an electric mixer until smooth. Gradually beat in the sugar and non-dairy milk until the mixture is smooth and thick. Add water if needed to reach desired consistency.
