Ingredients:
- 1 cup (2 sticks) of unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar

- 1 large egg
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt

Instructions:
1. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
2. Beat in the vanilla extract and egg one at a time, mixing well after each addition.
3. In a separate bowl, whisk together the flour, baking soda, and salt.
4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid over-mixing.
5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes or up to overnight.
6. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
7. Roll out the dough on a lightly floured surface to about 1/4 inch (6 mm) thickness.
