How to Make Sugar Cookies With Cake Mix

Using a cake mix is a simple shortcut to making your dough for sugar cookies. For best results, use a French vanilla or a white cake mix for plain sugar cookies. Because you are using a pre-measured cake mix, you do not have to worry about getting the precise measurements with your ingredients. All you do is add eggs and oil to get soft sugar cookies straight from your oven.

Things You'll Need

  • 1 18 oz. box cake mix (white, yellow or French vanilla) 2 large eggs 1/3 cup oil Mixer Mixing bowl Cookie scoop or tablespoon Flat-bottomed glass Baking sheet Cooking spray or parchment paper Cooling rack Cake icing (optional) Spatula (optional)

Instructions

  1. Preheat the oven to 350 degrees. Spray the baking sheet with cooking spray, or lay a sheet of parchment paper over the baking sheet.

  2. Combine all of he ingredients (cake mix, oil, and eggs) in a bowl.

  3. Beat with a mixer for two minutes or until a stiff dough forms. If the dough is too stiff to mix, add another tablespoon of oil.

  4. Drop the dough by rounded tablespoons or in rounds with the cookie scoop onto the prepared baking sheet.

  5. Dip the base of the flat-bottomed glass into water and press each of the cookies to about 1/2" flat.

  6. Bake the cookies for 10 to 13 minutes or until lightly blond. Let the cookies cool for 10 minutes on the baking sheet before transferring to a cooling rack to cool completely.
