How many layers on candy canes?

Candy canes don't really have layers in the same way a cake does. They're made by extruding a continuous stream of candy through a die that gives it the cane shape.

The color change is achieved by switching the colors of the candy being extruded. This is usually done in a spiral pattern to create the classic candy cane look.

So, there isn't a specific number of layers, but rather a continuous, spiraling pattern of colors.
